Turmeric Rice and Chicken/Tofu Salad
Here’s a great way to enjoy tumeric and the extra rice from last nights dinner. Another splendid one bowl meal!
For the vegetarians out there: Chop up a block of marinated tofu (and fry) to use instead of chicken.
1 c of cooked rice
1 tsp tumeric
½ c red/black grapes, de-stemmed
½ cucumber, peel and chop into small cubes
1 tomato, chop into cubes
¼ cup finely chopped mint, parsley or coriander
¼ red onion, dice
100 g firm feta, chop into small cubes
½ cooked free range chicken or 2 cooked chicken breasts, chop or shred
3 T olive oil
1 lemon, squeezed (or 2 T cider vinegar)
Mix all ingredients together in a large salad bowl. Season to taste with sea salt and black pepper.
