Tomato and Cashew Dip
Lovely on an antipasto platter or in a sandwich with lots of greens.
8 sun dried tomatoes, sliced
½ red capsicum, chopped
1 cup cashew pieces, soaked overnight, drained and rinsed
Several stems fresh coriander, chopped
Small handful of mint leaves
2 cloves garlic
1 tsp chilli sauce
½ tsp sea salt
Blitz the whole lot in a food processor or blender!
