Spinach Coconut Dip

This combination of ingredients sounds a bit odd, but try it and you'll be hooked! Delicious with crackers or on vegetable sticks.

2 cups spinach, washed and chopped
½ cup fresh coconut out of the shell, grated                   
(or 1/3 cup dried coconut & ¼ cup coconut cream)
½ cup sunflower seeds, soaked in water overnight and drained
1 orange, peeled and chopped
5 dates, chopped
Pinch cayenne powder
Sea salt

Blend or whizz in the food processor until smooth.  Adjust seasoning.
