Quinoa Tabouleh

Quinoa is a protein-packed grain grown in South America.  It can be cooked the same way as rice – boiled in water.  Use 2 cups water for one cup of dry quinoa, bring to a boil then turn the heat down low.  Simmer for about 20 minutes or until the water has all been absorbed. Quinoa recipes are ideal gluten free recipes for people with food intolerances.

3 cups cooked quinoa  (from 1 cup dry quinoa)
½ cup parsley, chopped fine
¼ cup coriander, chopped
¼ cup mint leaves
2 medium tomatoes, diced
Juice of two lemons
4 T olive oil
Sea salt and pepper to taste

Mix together.  Check seasoning and adjust if necessary.
