Quick Banana Nut Balls

This is based on a recipe from Sally-Anne Creed's nutrition newsletter. You can use any combination of nuts or seeds for this. I like this recipe because it is low in sugars, but satisfies little sweet cravings nicely. 

1 ripe banana
½ cup sunflower seeds
½ cup cashews (pieces are fine)
¼ cup desiccated coconut
1 T grated fresh ginger (or 1 t dry ginger)
Pinch sea-salt

1) Grind the nuts and seeds in a food processor or coffee grinder until they are the texture of course breadcrumbs.
2) Add all the other ingredients and blend briefly until combined.
3) Chill until mixture firms up – about 20 minutes if you pop it in the freezer!
4) Form into little balls. It may still be softish. Roll through some coconut powder if desired.
5) Chill until firm.

Note: It is fine if the balls are not initially well formed. You can improve the shape once they’ve been chilled the second time.
