Perfect Poached Eggs

Serves 6

Poaching is a good way to enjoy eggs regularly.  High-temperature frying or baking can damage the delicate proteins in egg, making them more difficult to digest.  Use organic free range eggs where possible.  They are laid by happy chickens nutritionally are far superior to battery-farmed eggs.  Organic eggs contain higher amount of all nutrients and are a particularly good source of omega-3 fats

4 organic free range eggs
2 T apple cider vinegar
1/2 teaspoon sea salt 

1. Bring a small pot of water to the boil.  Add the vinegar and turn the heat down so the water is at a low simmer. 

2. Using a slotted spoon, stir the water in the pot around several times until it is swirling on its own.  Now break each egg into the water, away from the centre.  The egg will swirl itself around and not stick to the bottom of the pot.

3. Keep the water at a low simmer while the eggs cook.  It will take about 3 or 4 minutes for the white to be cooked, with the yolk runny but deliciously warm.

4. Lift out with the slotted spoon onto your plate!
