Mango, Avocado and Mint Salsa
Serves 4 as a salsa and 2 as a salad
This flavour combination is heaven sent. I made it in five minutes and simply rolled it up in large lettuce leaves for lunch. It would be divine as a salsa with grilled fish or chicken and a green salad. It’s toppings like this that quickly make a meal into a celebration.
½ small cucumber
1/3 block feta
1 T olive oil
Small handful fresh mint
1) Remove flesh from the avocado and mango. Leave the skin on the cucumber if it’s organic. Cut the avocado, cucumber, mango and feta into 1-2 cm cubes.
2) Mix gently together with remaining ingredients.
3) Blend dressing ingredients together until smooth.
4) Pour dressing over salad and mix well. Flavours will deepen if you leave it to marinate for a half hour or so.
