Dutch cinnamon rice pancakes

These pancakes are yummy for breakfast or dessert!

My Dutch dad used to make cinnamon rice pancakes with left-over white rice, but I found it works wonderfully with brown rice.  You can try it with most other whole grains too. It is scrummy… and takes less than ten minutes!

2 ½ cups cooked grain
1 t cinnamon
2 eggs
Pinch salt
1 T honey or 1 T cane sugar
Rice bran oil or alternative

1) Mix all ingredients together in a bowl.

2) Fry heaped tablespoon amounts in a heated pan using small amounts of rice bran oil, clarified butter or coconut oil.

3) Serve with yoghurt (and maple syrup if you are in a treat mood!).
