Dairy Free Blueberry Jelly and Lemon Cream
Blueberry Jelly
You won’t believe how simple this raw dessert recipe is, nor how satisfying the result! Make this when blueberries are abundant, ripe and in season. Credit for this discovery goes to our good mate Sophie Brown.
For 4 people: put 2 cups of fresh blueberries in a blender or food processor. We love our Tribest Personal blender. Blend at highest speed until quite liquid. Pour into individual bowls or glasses. Leave for about ½ hour to set. When ready, serve topped with the Lemon Cream and a few extra whole blueberries.
Lemon Cream
½ cup raw macadamia or cashew nuts
¾ cup thinly sliced frozen banana
1 tsp honey
Rind of half a lemon
¼ cup of water
Blend well. Add more water if necessary to get the mixture to blend.
