5-spice Oat Porridge

Serves 2

The best way to make a creamy porridge without fuss is to soak the oats overnight.

If you forget to soak, you can still assemble everything in the morning – it will just take longer to cook and require a bit more attention.

1 cup organic whole grain rolled oats
¼ cup sunflower seeds
2 Tbsp dried currants or raisins
½ tsp Chinese 5-spice powder
Small pinch sea salt
2 cups water

Place all ingredients in a saucepan.  Leave to soak overnight. 

In the morning, place on the stove over a medium heat.  Bring slowly to a boil, cook for several minutes until thick and creamy.

Serve plain or with your favourite breakfast toppings – yoghurt, fresh fruit, honey, ground flaxseed…
